Ingredients:

  • 2 Large Green Plantains
  • 15 ml Avocado oil
  • 5 g Sea salt
  • 2 g Garlic powder

Instructions:

  1. Peel 2 Large Green Plantains by slicing off the ends and scoring the thick skin lengthwise.
  2. Cut the fruit into rounds approximately 2.5 cm thick.
  3. In a bowl, toss the rounds with 15 ml Avocado oil and 2 g Garlic powder.
  4. Place the pieces in the air fryer basket, ensuring they do not touch.
  5. Cook at 200°C for 8 minutes until they turn a pale, opaque yellow.
  6. Remove the pieces and, while hot, use the bottom of a heavy glass to smash them to about half their original thickness.
  7. Mist the smashed surfaces with a tiny bit more oil if they look floury or dry.
  8. Return to the air fryer for 7 minutes until the edges are golden and they crackle when tapped.
  9. Remove immediately and toss with 5 g Sea salt while the residual oil is still warm.
