Ingredients:
- 2 cups (300g) grated Granny Smith or Honeycrisp apples, peeled
- 1 tsp (5ml) lemon juice
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) coconut sugar
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- 2 large eggs, room temperature
- 1/2 cup (120g) plain Greek yogurt
- 1/4 cup (60ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 2 tbsp (25g) melted butter
- 2 tbsp (16g) coconut sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Peel and grate the apples using the coarse side of the grater.
- Toss the grated apples with lemon juice in a small bowl and set aside to prevent oxidation.
- In a large bowl, whisk together the flour, coconut sugar, baking soda, salt, and cinnamon until no clumps remain.
- In a separate bowl, whisk together the room-temperature eggs, Greek yogurt, melted coconut oil, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until no streaks of flour are visible.
- Fold in the grated apple mixture until evenly distributed throughout the batter.
- Line a 9x5 inch loaf pan with parchment paper.
- Pour half of the batter into the prepared pan.
- Mix the melted butter, 2 tablespoons coconut sugar, and 1 teaspoon cinnamon into a paste and swirl it into the batter.
- Top with the remaining batter and bake for 55 minutes or until a toothpick comes out clean.
