Ingredients:

  • 2 cups (300g) grated Granny Smith or Honeycrisp apples, peeled
  • 1 tsp (5ml) lemon juice
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) coconut sugar
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tbsp (8g) ground cinnamon
  • 2 large eggs, room temperature
  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup (60ml) melted coconut oil
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (25g) melted butter
  • 2 tbsp (16g) coconut sugar
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Peel and grate the apples using the coarse side of the grater.
  2. Toss the grated apples with lemon juice in a small bowl and set aside to prevent oxidation.
  3. In a large bowl, whisk together the flour, coconut sugar, baking soda, salt, and cinnamon until no clumps remain.
  4. In a separate bowl, whisk together the room-temperature eggs, Greek yogurt, melted coconut oil, and vanilla extract until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until no streaks of flour are visible.
  6. Fold in the grated apple mixture until evenly distributed throughout the batter.
  7. Line a 9x5 inch loaf pan with parchment paper.
  8. Pour half of the batter into the prepared pan.
  9. Mix the melted butter, 2 tablespoons coconut sugar, and 1 teaspoon cinnamon into a paste and swirl it into the batter.
  10. Top with the remaining batter and bake for 55 minutes or until a toothpick comes out clean.
