Ingredients:

  • 6 cups (450g) stale brioche or challah, cubed into 1-inch pieces
  • 2 tbsp (28g) unsalted butter, melted
  • 3 cups (450g) peeled and diced Granny Smith or Honeycrisp apples
  • 1 tsp (5g) ground cinnamon
  • 2 tbsp (25g) brown sugar
  • 1 tbsp (15ml) lemon juice
  • 2 cups (480ml) whole milk
  • 1 cup (240ml) heavy cream
  • 4 large eggs
  • ½ cup (100g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • ½ tsp (3g) ground nutmeg
  • ¼ tsp (1.5g) salt
  • 1 cup (200g) granulated sugar
  • 6 tbsp (85g) unsalted butter, cubed
  • ½ cup (120ml) heavy cream
  • ½ tsp (3g) sea salt

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Toss diced apples with cinnamon, brown sugar, and lemon juice in a small bowl.
  3. If using fresh bread, toast the brioche cubes in the oven for 5-10 minutes with melted butter until dry to the touch.
  4. In a large mixing bowl, whisk eggs and sugar until pale, then stir in milk, heavy cream, vanilla, nutmeg, and salt until smooth.
  5. Fold the toasted bread cubes and the spiced apple mixture into the custard, pressing gently to ensure all bread is submerged.
  6. Pour mixture into the baking dish and bake for 40–45 minutes until edges bubble and the top is golden brown.
  7. Prepare caramel sauce by melting sugar in a saucepan over medium heat until amber, stirring in butter and heavy cream, and whisking in salt.
  8. Drizzle the warm caramel sauce over the bread pudding immediately after removing it from the oven.
