Ingredients:

  • 2 pieces (17.5g) high-quality dry edible bird’s nest
  • 500 ml distilled water
  • 30g yellow lump rock sugar
  • 4 pieces dried red dates (jujubes), pitted
  • 10g dried goji berries

Instructions:

  1. Place the dry bird's nests in a bowl of distilled water for 4 to 8 hours until soft and expanded. Use kitchen tweezers to remove any visible impurities or down feathers. Rinse thoroughly through a fine-mesh strainer.
  2. Place the cleaned bird's nest strands and the pitted red dates into a ceramic double-boiler jar. Add 500ml of fresh distilled water.
  3. Set the jar inside a large pot filled with water reaching halfway up the side of the jar. Cover both the jar and the pot. Simmer over low heat for 30 to 40 minutes.
  4. In the final 5 minutes of cooking, add the rock sugar and goji berries. Stir gently until the sugar is fully dissolved, then remove from heat immediately.
