Ingredients:
- 2 cups all-purpose flour
- 3 large eggs
- 1 cup whole milk
- 1 tsp salt
- 1/4 tsp ground nutmeg
- 1 tbsp unsalted butter
- 2 tbsp fresh parsley, finely chopped
Instructions:
- In a medium mixing bowl, whisk together the flour, salt, and nutmeg.
- Create a well in the center of the dry ingredients and add the eggs and milk.
- Beat the mixture vigorously with a wooden spoon or stand mixer on medium speed for 3–5 minutes until the batter is smooth, slightly glossy, and small air bubbles appear on the surface.
- Bring a large pot of salted water to a gentle simmer.
- Using a Spaetzle press or pushing the dough through the holes of a colander, press the batter directly into the simmering water in small portions.
- Wait for the noodles to rise to the surface (usually 2–3 minutes), then remove them with a slotted spoon.
- Optional: Sauté the boiled noodles in a large skillet with 1 tbsp of butter until golden brown, then toss with finely chopped fresh parsley.
