Ingredients:
- 2 cups (250g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (2.5g) baking powder
- 1/2 teaspoon (3g) salt
- 1/2 teaspoon (1g) ground cinnamon (optional)
- 3 large (150g) ripe avocados, mashed
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 2 large (100g) eggs, lightly beaten
- 1/4 cup (60ml) vegetable oil
- 1 teaspoon (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using).
- In a separate medium bowl, mash the avocados well. Add the granulated sugar, brown sugar, eggs, oil, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and sprinkle the top with chopped nuts, chocolate chips, or seeds (if desired).
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean, or with a few moist crumbs clinging to it.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
