Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. In a saucepan, melt the butter over low heat. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine melted butter, granulated sugar, eggs, and vanilla. Whisk until well blended.
  5. In another bowl, mix cocoa powder, flour, salt, and baking powder.
  6. Slowly add the dry ingredients to the wet mixture, stirring just until combined.
  7. Pour batter into the prepared muffin tin, filling each liner about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cupcakes cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  10. In a bowl, beat together softened cream cheese and butter. Gradually add powdered sugar and vanilla, mixing until smooth. Adjust consistency with milk if necessary.
  11. Once cupcakes are completely cool, frost each with creamy frosting using a spatula or piping bag.
