Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60g) unsalted butter, cold and cubed
  • 1 cup (100g) sharp cheddar cheese, grated
  • 3/4 cup (180ml) whole milk
  • 1 large egg (optional for egg wash)
  • 1 tablespoon milk (optional for egg wash)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine flour, baking powder, salt, and pepper.
  3. Add the cold cubed butter, and mix until the mixture resembles coarse crumbs.
  4. Stir in the grated cheddar cheese.
  5. Make a well in the center and pour in the milk.
  6. Mix until just combined, being careful not to overmix.
  7. Turn the dough onto a floured surface and gently knead a few times.
  8. Pat the dough into a circle about 1-inch thick.
  9. Use a round cutter to cut out scones and place them on a baking sheet lined with parchment paper.
  10. Optional: Whisk the egg and milk to create an egg wash and brush over the top of each scone for a golden finish.
  11. Bake in the preheated oven for 15-20 minutes, or until golden brown on top.
  12. Let cool slightly before serving.
