Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk
  • 1/2 cup (40g) sweetened shredded coconut
  • 1/4 cup (30g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in eggs one at a time and add vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients into the wet mixture, alternating with milk. Mix until just combined.
  6. Fold in the shredded coconut and chocolate chips if using.
  7. Pour the batter into the prepared baking pan and smooth the top. Bake for 25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Let the treats cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Cut into squares and serve.
