Ingredients:
- 1 pound fresh lump crab meat, drained and picked over for shells
- 1 cup breadcrumbs (preferably panko)
- 1/4 cup unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Additional fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Melt butter in a skillet over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic and cook for another minute.
- In a mixing bowl, combine sautéed onions and garlic with crab meat, breadcrumbs, parsley, lemon juice, Old Bay seasoning, salt, black pepper, and cayenne (if using).
- Gently fold the ingredients together until well combined.
- Cover the mixture and chill in the refrigerator for 30 minutes to firm up.
- Spoon the crab stuffing into the greased baking dish evenly.
- Sprinkle shredded cheddar cheese on top and drizzle with olive oil.
- Bake in the preheated oven for 25-30 minutes until golden and bubbly.
- Remove from oven, let cool slightly, and garnish with fresh parsley before serving.
