Ingredients:
- 2 cups (240g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup (180ml) kefir, plain or flavored
- 1/2 cup (120ml) vegetable oil
- 3 large eggs
- Zest of 1 medium lemon
- 1 teaspoon vanilla extract
- 1 cup (240ml) heavy cream
- 1 cup (120g) powdered sugar
- 1 teaspoon vanilla extract
- Zest of 1 lime (for garnish)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the baking sheet with butter or non-stick spray and set aside.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the kefir, vegetable oil, eggs, lemon zest, and vanilla extract.
- Gradually combine the wet mixture with the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
- Pour the batter into the prepared baking sheet and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add in powdered sugar and vanilla extract until well combined and fluffy.
- Once cooled, spread the frosting evenly over the cake. Garnish with lime zest.
