Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (180ml) kefir, plain or flavored
  • 1/2 cup (120ml) vegetable oil
  • 3 large eggs
  • Zest of 1 medium lemon
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy cream
  • 1 cup (120g) powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lime (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the baking sheet with butter or non-stick spray and set aside.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together the kefir, vegetable oil, eggs, lemon zest, and vanilla extract.
  5. Gradually combine the wet mixture with the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
  6. Pour the batter into the prepared baking sheet and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool completely in the pan on a wire rack.
  9. In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add in powdered sugar and vanilla extract until well combined and fluffy.
  10. Once cooled, spread the frosting evenly over the cake. Garnish with lime zest.
