Ingredients:
- 1 ½ cups (190 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (240 ml) plain kefir
- ½ cup (120 ml) vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 large lemon
- 1 cup (120 g) powdered sugar
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon (optional for garnish)
Instructions:
- Preheat the oven to 350°F (175°C).
- Line the baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the kefir, vegetable oil, eggs, vanilla extract, and lemon zest until smooth.
- Pour the wet mixture into the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking sheet and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the baking sheet for 10 minutes, then transfer to a cooling rack.
- In a small bowl, mix powdered sugar with lemon juice until smooth.
- Once the cake is completely cool, drizzle the lemon glaze over the top.
- Cut into squares and serve immediately or store in an airtight container.
