Ingredients:

  • 1 ½ cups (190 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240 ml) plain kefir
  • ½ cup (120 ml) vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 large lemon
  • 1 cup (120 g) powdered sugar
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon (optional for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line the baking sheet with parchment paper.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, mix the kefir, vegetable oil, eggs, vanilla extract, and lemon zest until smooth.
  5. Pour the wet mixture into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared baking sheet and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Allow the cake to cool in the baking sheet for 10 minutes, then transfer to a cooling rack.
  8. In a small bowl, mix powdered sugar with lemon juice until smooth.
  9. Once the cake is completely cool, drizzle the lemon glaze over the top.
  10. Cut into squares and serve immediately or store in an airtight container.
