Ingredients:

  • 1 cup (240 mL) extra-virgin olive oil
  • 1 cup (200 g) granulated sugar
  • 1 cup (200 g) packed light brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1 cup (90 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (170 g) semi-sweet chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the olive oil, granulated sugar, and brown sugar until well combined.
  3. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  6. Fold in the chocolate chips if using, ensuring they are evenly distributed.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  9. Remove from the oven and let cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.
  10. Once cool, cut into squares and serve.
