Ingredients:
- 1 cup (240 mL) extra-virgin olive oil
- 1 cup (200 g) granulated sugar
- 1 cup (200 g) packed light brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (125 g) all-purpose flour
- 1 cup (90 g) unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup (170 g) semi-sweet chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the olive oil, granulated sugar, and brown sugar until well combined.
- Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Fold in the chocolate chips if using, ensuring they are evenly distributed.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
- Remove from the oven and let cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.
- Once cool, cut into squares and serve.
