Ingredients:

  • 4 cups fresh ripe peaches, peeled and sliced (about 6-8 medium peaches; 600g)
  • 1/4 cup granulated sugar (50g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon vanilla extract (5ml)
  • 2 tablespoons cornstarch (16g)
  • 1/2 teaspoon ground cinnamon (2g)
  • 1 cup all-purpose flour (120g)
  • 1/2 cup rolled oats (50g)
  • 1/2 cup brown sugar, packed (100g)
  • 1/2 teaspoon salt (2g)
  • 1/2 cup unsalted butter, melted (113g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice the peaches. In a mixing bowl, combine peaches with sugar, lemon juice, vanilla, cornstarch, and cinnamon. Gently stir to coat the peaches evenly and set aside.
  3. In another mixing bowl, combine flour, oats, brown sugar, and salt. Pour in melted butter and mix until crumbly.
  4. Spread the peach mixture evenly in the baking dish and sprinkle the crumble topping over the peaches.
  5. Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the filling is bubbling.
  6. Allow to cool for a few minutes before serving warm.
