Ingredients:
- 4 cups fresh ripe peaches, peeled and sliced (about 6-8 medium peaches; 600g)
- 1/4 cup granulated sugar (50g)
- 1 tablespoon lemon juice (15ml)
- 1 teaspoon vanilla extract (5ml)
- 2 tablespoons cornstarch (16g)
- 1/2 teaspoon ground cinnamon (2g)
- 1 cup all-purpose flour (120g)
- 1/2 cup rolled oats (50g)
- 1/2 cup brown sugar, packed (100g)
- 1/2 teaspoon salt (2g)
- 1/2 cup unsalted butter, melted (113g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Peel and slice the peaches. In a mixing bowl, combine peaches with sugar, lemon juice, vanilla, cornstarch, and cinnamon. Gently stir to coat the peaches evenly and set aside.
- In another mixing bowl, combine flour, oats, brown sugar, and salt. Pour in melted butter and mix until crumbly.
- Spread the peach mixture evenly in the baking dish and sprinkle the crumble topping over the peaches.
- Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the filling is bubbling.
- Allow to cool for a few minutes before serving warm.
