Ingredients:
- 4 (6 oz) steelhead trout fillets (170 g)
- 2 tablespoons (30 ml) olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 teaspoon (5 g) salt
- ½ teaspoon (2 g) black pepper
- 2 tablespoons (30 g) fresh dill or parsley, chopped (for garnish)
- Lemon wedges (for garnish)
- Mixed greens or roasted vegetables
Instructions:
- Preheat the oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or foil.
- In a mixing bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper until well combined.
- Place steelhead trout fillets on the baking sheet, skin-side down. Brush marinade generously over the fillets.
- Bake in the preheated oven for 12-15 minutes until the trout flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
- Remove from the oven, garnish with fresh herbs, and serve immediately with lemon wedges.
