  • 1 cup (90g) rolled oats
  • 1/2 cup (90g) vegan chocolate chips
  • 1/2 cup (70g) chopped nuts (e.g., walnuts or pecans)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. In a bowl, whisk together flour, baking soda, and salt.
  4. In another bowl, mix the melted coconut oil, brown sugar, and granulated sugar until well combined.
  5. Stir in plant-based milk and vanilla extract to the sugar mixture until smooth.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Gently fold in rolled oats, vegan chocolate chips, and chopped nuts.
  8. Use a cookie scoop or spoon to drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 12-15 minutes, or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
