- 1 cup (90g) rolled oats
- 1/2 cup (90g) vegan chocolate chips
- 1/2 cup (70g) chopped nuts (e.g., walnuts or pecans)
Instructions:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper for easy cleanup.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, mix the melted coconut oil, brown sugar, and granulated sugar until well combined.
- Stir in plant-based milk and vanilla extract to the sugar mixture until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in rolled oats, vegan chocolate chips, and chopped nuts.
- Use a cookie scoop or spoon to drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
