Ingredients:
- 2 cups dried white beans, soaked overnight
- 4 cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup BBQ sauce (plus extra for drizzling)
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon mustard powder
- Salt and pepper to taste
- 4 strips of bacon, chopped (optional)
Instructions:
- Drain and rinse the soaked beans. In a large pot, combine soaked beans with 4 cups of water and bring to a boil. Cook for about 30 minutes until tender. Drain the beans and set aside.
- In the same pot, heat olive oil over medium heat. Add chopped onion and sauté for 5-7 minutes until translucent. Stir in minced garlic and cook for an additional minute.
- Add the drained beans back to the pot. Pour in the BBQ sauce, brown sugar, apple cider vinegar, smoked paprika, and mustard powder. Season with salt and pepper to taste. Stir well to combine.
- Bring the mixture to a simmer. Reduce the heat to low and cook uncovered for about 30 minutes, stirring occasionally until the sauce thickens. If desired, add chopped bacon midway through cooking for extra flavour.
- Remove from heat. Let cool slightly and serve warm with a drizzle of BBQ sauce on top.
