Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (40g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (60ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) boiling water
  • 1 cup (230g) unsalted butter, softened
  • 3–4 cups (360–480g) powdered sugar
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • Black and yellow gel food coloring (for decoration)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line the muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together egg, milk, oil, and vanilla.
  4. Combine both mixtures and stir until just combined.
  5. Carefully stir in boiling water until smooth.
  6. Pour batter into cupcake liners, filling each about 2/3 full.
  7. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  8. Let cupcakes cool in the tin for 5 minutes, then transfer to a cooling rack.
  9. While cooling, prepare the frosting by beating softened butter and gradually adding powdered sugar and cream until desired consistency is achieved.
  10. Divide frosting into two bowls and tint one with black and one with yellow gel food coloring.
  11. Once cupcakes are cool, frost with black frosting and decorate with yellow accents to create the Batman symbol.
