Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (40g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup (120ml) whole milk
- 1/4 cup (60ml) vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) boiling water
- 1 cup (230g) unsalted butter, softened
- 3–4 cups (360–480g) powdered sugar
- 1/4 cup (60ml) heavy cream
- 1 teaspoon vanilla extract
- Black and yellow gel food coloring (for decoration)
Instructions:
- Preheat the oven to 350°F (175°C) and line the muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together egg, milk, oil, and vanilla.
- Combine both mixtures and stir until just combined.
- Carefully stir in boiling water until smooth.
- Pour batter into cupcake liners, filling each about 2/3 full.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Let cupcakes cool in the tin for 5 minutes, then transfer to a cooling rack.
- While cooling, prepare the frosting by beating softened butter and gradually adding powdered sugar and cream until desired consistency is achieved.
- Divide frosting into two bowls and tint one with black and one with yellow gel food coloring.
- Once cupcakes are cool, frost with black frosting and decorate with yellow accents to create the Batman symbol.
