Ingredients:

  • 4 Tbsp Kosher Salt (Coarse Flakes)
  • 2 Tbsp Black Pepper, freshly ground
  • 3 Tbsp Smoked Paprika (Spanish Pimentón)
  • 2 Tbsp Garlic Powder
  • 2 Tbsp Dried Thyme
  • 1 Tbsp Onion Powder
  • 2 Tbsp Light Brown Sugar, packed
  • 1 Tbsp Dried Rosemary, finely crushed
  • 1 Tbsp Dry Mustard Powder
  • 1 tsp Cayenne Pepper (optional)

Instructions:

  1. Gather and measure all specified spices, herbs, salt, pepper, and sugar into a medium mixing bowl.
  2. If using whole dried rosemary leaves, crush them finely using a mortar and pestle or by rubbing them between your fingers to release the aroma.
  3. Add all measured ingredients—salt, pepper, smoked paprika, garlic powder, onion powder, thyme, rosemary, brown sugar, dry mustard powder, and cayenne (if using)—into the mixing bowl.
  4. Whisk the mixture vigorously for 1-2 minutes until any brown sugar lumps are broken up and all ingredients are thoroughly and evenly distributed. The color of the Turkey Rub should be uniform.
  5. Transfer the finished rub to an airtight jar or container for storage. Store in a cool, dark pantry.
