Ingredients:
- 1 cup raw cashews, soaked for 2 hours
- ¾ cup water
- ¼ cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons cocoa powder (optional, for chocolate variation)
Instructions:
- Rinse raw cashews under cold water and soak in water for 2 hours.
- Drain and rinse soaked cashews. In a high-speed blender, combine soaked cashews, ¾ cup water, maple syrup, vanilla extract, and a pinch of salt. Blend on high until completely smooth and creamy, stopping to scrape down sides as needed.
- For chocolate variation, add cocoa powder and blend until smooth.
- Transfer the cashew cream to a mixing bowl and refrigerate for at least 30 minutes to thicken.
- Serve chilled as a dessert topping or on its own.
