Ingredients:

  • 1 cup raw cashews, soaked for 2 hours
  • ¾ cup water
  • ¼ cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons cocoa powder (optional, for chocolate variation)

Instructions:

  1. Rinse raw cashews under cold water and soak in water for 2 hours.
  2. Drain and rinse soaked cashews. In a high-speed blender, combine soaked cashews, ¾ cup water, maple syrup, vanilla extract, and a pinch of salt. Blend on high until completely smooth and creamy, stopping to scrape down sides as needed.
  3. For chocolate variation, add cocoa powder and blend until smooth.
  4. Transfer the cashew cream to a mixing bowl and refrigerate for at least 30 minutes to thicken.
  5. Serve chilled as a dessert topping or on its own.
