Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- ¼ cup (50g) granulated sugar
- 1 (14-ounce) can (400g) sweetened condensed milk
- ½ cup (120ml) Key lime juice
- ¼ cup (60ml) Blue Curaçao liqueur
- 2 large egg yolks
- 1 teaspoon lime zest
- 1 cup (240ml) heavy cream
- 2 tablespoons (25g) powdered sugar
- Lime wedges, for garnish
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar. Press into a pie plate.
- Bake the crust until lightly golden brown. Let cool completely.
- Whisk together sweetened condensed milk, Key lime juice, blue curacao liqueur, egg yolks, and lime zest.
- Pour the filling into the cooled crust.
- Bake until the filling is set but slightly jiggly.
- Chill completely in the refrigerator for at least 1 hour.
- Whip heavy cream and powdered sugar until stiff peaks form (optional).
- Top with whipped cream (if using) and garnish with lime wedges. Slice and serve cold.
