Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tablespoons (70g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
  • 1 (14-ounce) can (400g) sweetened condensed milk
  • ½ cup (120ml) Key lime juice
  • ¼ cup (60ml) Blue Curaçao liqueur
  • 2 large egg yolks
  • 1 teaspoon lime zest
  • 1 cup (240ml) heavy cream
  • 2 tablespoons (25g) powdered sugar
  • Lime wedges, for garnish

Instructions:

  1. Combine graham cracker crumbs, melted butter, and sugar. Press into a pie plate.
  2. Bake the crust until lightly golden brown. Let cool completely.
  3. Whisk together sweetened condensed milk, Key lime juice, blue curacao liqueur, egg yolks, and lime zest.
  4. Pour the filling into the cooled crust.
  5. Bake until the filling is set but slightly jiggly.
  6. Chill completely in the refrigerator for at least 1 hour.
  7. Whip heavy cream and powdered sugar until stiff peaks form (optional).
  8. Top with whipped cream (if using) and garnish with lime wedges. Slice and serve cold.
