Ingredients:

  • 45ml (1.5 oz) London Dry Gin
  • 15ml (0.5 oz) Grand Marnier
  • 15ml (0.5 oz) Freshly squeezed lemon juice
  • 5ml (1 tsp) Simple syrup (1:1 ratio)
  • 1 large Fresh egg white
  • 4g (1 tsp) Granulated sugar for the rim
  • 1 Lemon wedge for garnish

Instructions:

  1. Prepare the glassware by running a lemon wedge around half the rim of a chilled coupe glass. Dip the moistened edge into a shallow plate of granulated sugar and set aside.
  2. Perform a 'Dry Shake' by adding the gin, Grand Marnier, lemon juice, simple syrup, and egg white into a cocktail shaker without ice. Shake vigorously for 15 seconds to emulsify the egg white proteins.
  3. Add large, solid ice cubes to the shaker. Shake again for another 15 seconds until the shaker is frost-cold.
  4. Double-strain the mixture through a Hawthorne strainer and a fine-mesh sieve into the prepared coupe glass to ensure a smooth, uniform foam.
  5. Garnish with a thin lemon twist and serve immediately.
