Ingredients:

  • 1 pound (454g) Sugar Snap Peas, trimmed
  • 1 Lemon, zested and juiced
  • 2 tablespoons (30ml) Olive Oil, extra virgin
  • 2 tablespoons (30ml) Water
  • 1/4 cup (packed) Fresh Herbs, such as parsley, mint, or dill, roughly chopped
  • Salt and freshly ground Black Pepper, to taste

Instructions:

  1. Wash and trim the sugar snap peas.
  2. Add water to the saucepan, place steamer basket inside, and bring to a boil. Add sugar snaps, cover, and steam until bright green and tender-crisp (about 3-5 minutes).
  3. While the sugar snaps steam, whisk together lemon zest, lemon juice, olive oil in a mixing bowl. Season with salt and pepper.
  4. Immediately transfer the steamed sugar snaps to the mixing bowl with the lemon-herb dressing. Toss to coat. Stir in the chopped fresh herbs.
  5. Taste and adjust seasoning as needed. Serve immediately, either warm or at room temperature.
