Ingredients:
- 1 pound (454g) Sugar Snap Peas, trimmed
- 1 Lemon, zested and juiced
- 2 tablespoons (30ml) Olive Oil, extra virgin
- 2 tablespoons (30ml) Water
- 1/4 cup (packed) Fresh Herbs, such as parsley, mint, or dill, roughly chopped
- Salt and freshly ground Black Pepper, to taste
Instructions:
- Wash and trim the sugar snap peas.
- Add water to the saucepan, place steamer basket inside, and bring to a boil. Add sugar snaps, cover, and steam until bright green and tender-crisp (about 3-5 minutes).
- While the sugar snaps steam, whisk together lemon zest, lemon juice, olive oil in a mixing bowl. Season with salt and pepper.
- Immediately transfer the steamed sugar snaps to the mixing bowl with the lemon-herb dressing. Toss to coat. Stir in the chopped fresh herbs.
- Taste and adjust seasoning as needed. Serve immediately, either warm or at room temperature.
