Ingredients:
- 2.5 cups (310g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (6g) salt
- 1 tbsp (12g) granulated sugar
- 8 tbsp (120ml) ice-cold water
- 3 lbs (1.3kg) apples, peeled and sliced
- 0.75 cup (150g) packed light brown sugar
- 0.25 cup (50g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tbsp (8g) ground cinnamon
- 0.25 tsp (1g) ground nutmeg
- 1 tbsp (15ml) lemon juice
- 1 large egg
- 1 tbsp water
- 1 tbsp (12g) coarse turbinado sugar
Instructions:
- In a large bowl, whisk together 310g all-purpose flour, 6g salt, and 12g granulated sugar.
- Add chilled butter cubes and use a pastry cutter or forks to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized lumps remaining.
- Add ice-cold water one tablespoon at a time, stirring gently until the dough just begins to clump together.
- Divide the dough into two discs, wrap in plastic, and refrigerate for at least 30 minutes.
- Toss sliced apples with 15ml lemon juice to prevent browning.
- In a large bowl, combine the apples with 150g brown sugar, 50g granulated sugar, 16g cornstarch, 8g ground cinnamon, and 1g ground nutmeg.
- Roll out one dough disc and fit it into a 9-inch deep-dish pie plate.
- Fill the crust with the seasoned apple mixture and cover with the second rolled-out dough disc.
- Seal the edges, cut vents in the top crust, and brush with a beaten egg and water mixture.
- Sprinkle the top with 12g turbinado sugar and bake for 50 minutes until the crust is golden brown.
