Ingredients:
- 2 cups (240g) all-purpose flour
- 1 tsp (5g) baking powder
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) kosher salt
- 2 tsp (5g) ground cinnamon
- 1 tsp (2g) ground ginger
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (0.5g) ground cloves
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 cup (245g) pumpkin puree
- 1/4 cup (60g) plain Greek yogurt
- 1 tsp (5ml) pure vanilla extract
- 1/4 cup (50g) light brown sugar, packed
- 2 tbsp (30ml) heavy cream
- 1 tbsp (15g) unsalted butter
- 1/2 cup (60g) powdered sugar, sifted
- 1/2 tsp (2.5ml) pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or 12-cup Bundt pan thoroughly with butter and a dusting of flour.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves until well combined.
- In a large bowl, cream the softened butter and 150g brown sugar until light and fluffy, approximately 3 minutes.
- Beat in the eggs one at a time, then mix in the vanilla extract and Greek yogurt.
- Stir in the pumpkin puree until the batter is smooth and fully incorporated.
- Gradually fold in the dry ingredient mixture using a spatula, mixing just until the flour streaks disappear.
- Pour the batter into the prepared pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the glaze by combining 50g brown sugar, heavy cream, and 15g butter in a saucepan over medium heat until melted.
- Remove the glaze from heat and stir in powdered sugar and vanilla extract until smooth.
- Drizzle the shimmering brown sugar glaze over the cooled cake before serving.
