Ingredients:
- 1 ¾ cups (210g) all-purpose flour
- ¾ cup (150g) light brown sugar, packed
- ¼ cup (50g) granulated sugar
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- 1 tbsp (6g) pumpkin pie spice
- ½ tsp (1g) ground cinnamon
- ¼ tsp (1.5g) sea salt
- 1 cup (245g) pumpkin puree
- ½ cup (120ml) neutral oil
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) vanilla extract
- ¼ cup (50g) all-purpose flour
- ¼ cup (50g) light brown sugar, packed
- 2 tbsp (28g) unsalted butter, cold and cubed
- ½ tsp (1g) ground cinnamon
Instructions:
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, both sugars, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt until no large clumps of brown sugar remain.
- Create a well in the center of the dry ingredients and pour in the pumpkin puree, oil, eggs, and vanilla extract.
- Gently fold the mixture with a silicone spatula until just combined, stopping as soon as flour streaks disappear.
- In a small bowl, combine the crumble flour, brown sugar, and cinnamon.
- Use fingertips or a fork to rub the cold cubed butter into the flour mixture until it resembles coarse, sandy crumbs.
- Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
- Generously sprinkle the brown sugar crumble over the top of each muffin, pressing lightly to adhere.
- Bake for 18–22 minutes until the tops are golden-brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool in the pan for 5 minutes before transferring to a wire rack.
