Ingredients:
- 3 ½ cups all-purpose flour (440g)
- 1 packet active dry yeast (2 ¼ tsp or 7g)
- 1 ½ cups warm water (110°F/43°C)
- 1 tbsp granulated sugar (12g)
- 1 tsp salt (5g)
- 2 tbsp unsalted butter, melted (28g)
- 8 cups water (1.89 liters)
- ½ cup baking soda (120g)
- Coarse sea salt (for sprinkling)
Instructions:
- In a bowl, combine warm water, yeast, and sugar; let sit until bubbly (about 5-10 minutes).
- In a large mixing bowl, combine flour and salt.
- Once yeast is activated, slowly mix into the flour along with melted butter.
- Knead until smooth and elastic (about 5-7 minutes).
- Place dough in a lightly greased bowl, cover, and let rise for about 1 hour, until doubled in size.
- Punch down the risen dough and divide into 8 equal pieces.
- Roll each piece into a long oval shape.
- Bring water to a gentle boil in a large pot and whisk in baking soda.
- Boil each bun for about 30 seconds, then transfer to a baking sheet.
- Preheat the oven to 425°F (220°C).
- Sprinkle coarse sea salt on top of the boiled buns and bake for 12-15 minutes until golden brown.
- Allow buns to cool slightly before serving with your favorite hot dogs.
