Ingredients:

  • 3 ½ cups all-purpose flour (440g)
  • 1 packet active dry yeast (2 ¼ tsp or 7g)
  • 1 ½ cups warm water (110°F/43°C)
  • 1 tbsp granulated sugar (12g)
  • 1 tsp salt (5g)
  • 2 tbsp unsalted butter, melted (28g)
  • 8 cups water (1.89 liters)
  • ½ cup baking soda (120g)
  • Coarse sea salt (for sprinkling)

Instructions:

  1. In a bowl, combine warm water, yeast, and sugar; let sit until bubbly (about 5-10 minutes).
  2. In a large mixing bowl, combine flour and salt.
  3. Once yeast is activated, slowly mix into the flour along with melted butter.
  4. Knead until smooth and elastic (about 5-7 minutes).
  5. Place dough in a lightly greased bowl, cover, and let rise for about 1 hour, until doubled in size.
  6. Punch down the risen dough and divide into 8 equal pieces.
  7. Roll each piece into a long oval shape.
  8. Bring water to a gentle boil in a large pot and whisk in baking soda.
  9. Boil each bun for about 30 seconds, then transfer to a baking sheet.
  10. Preheat the oven to 425°F (220°C).
  11. Sprinkle coarse sea salt on top of the boiled buns and bake for 12-15 minutes until golden brown.
  12. Allow buns to cool slightly before serving with your favorite hot dogs.
