Ingredients:
- 1 cup fresh parsley, finely chopped (about 30 grams)
- 1/2 cup fresh cilantro, finely chopped (about 15 grams)
- 4 cloves garlic, minced
- 1/2 cup olive oil (120 ml)
- 1/4 cup red wine vinegar (60 ml)
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 cups sweet cherry tomatoes, halved (about 300 grams)
- 1 small onion, finely diced
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon sugar (optional, to enhance sweetness)
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine parsley, cilantro, garlic, olive oil, vinegar, oregano, and red pepper flakes. Season with salt and pepper to taste; mix well. Set aside to allow the flavors to meld.
- Heat olive oil in a large sauté pan over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in halved cherry tomatoes; cook until they begin to break down (around 8-10 minutes).
- Transfer the cooked sweet tomato mixture to a blender. Add the prepared chimichurri and blend until smooth or desired consistency is reached. Taste and adjust seasoning with salt, pepper, and optional sugar.
- Allow the sauce to cool slightly before using on your pizza. Spread over pizza dough and top with favorite ingredients before baking.
