Ingredients:

  • 1 cup fresh parsley, finely chopped (about 30 grams)
  • 1/2 cup fresh cilantro, finely chopped (about 15 grams)
  • 4 cloves garlic, minced
  • 1/2 cup olive oil (120 ml)
  • 1/4 cup red wine vinegar (60 ml)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 cups sweet cherry tomatoes, halved (about 300 grams)
  • 1 small onion, finely diced
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon sugar (optional, to enhance sweetness)
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine parsley, cilantro, garlic, olive oil, vinegar, oregano, and red pepper flakes. Season with salt and pepper to taste; mix well. Set aside to allow the flavors to meld.
  2. Heat olive oil in a large sauté pan over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in halved cherry tomatoes; cook until they begin to break down (around 8-10 minutes).
  3. Transfer the cooked sweet tomato mixture to a blender. Add the prepared chimichurri and blend until smooth or desired consistency is reached. Taste and adjust seasoning with salt, pepper, and optional sugar.
  4. Allow the sauce to cool slightly before using on your pizza. Spread over pizza dough and top with favorite ingredients before baking.
