Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 cup (240ml) milk
  • ½ cup (115g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ cup (50g) granulated sugar for topping
  • 1 tablespoon ground cinnamon for topping
  • 2 tablespoons unsalted butter, melted for brushing

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the muffin tin or line with muffin liners.
  2. In a large bowl, whisk together the flour, baking powder, ground cinnamon, salt, and sugar until well-mixed.
  3. In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Mix until combined.
  4. Pour the wet mixture into the dry ingredients. Gently stir with a spatula until just combined—don’t overmix!
  5. Divide the batter evenly among the muffin cups, filling them about ¾ full.
  6. Bake in the preheated oven for about 15-20 minutes or until golden brown and a toothpick inserted into the centre comes out clean.
  7. While muffins are baking, mix granulated sugar and cinnamon in a small bowl.
  8. Once out of the oven, brush the tops of muffins with melted butter, then sprinkle with cinnamon sugar mix while still warm.
  9. Allow muffins to cool in the tin for 5 minutes before transferring them to a cooling rack.
