Ingredients:
- 2 cups (240g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 cup (240ml) milk
- ½ cup (115g) unsalted butter, melted
- 1 teaspoon vanilla extract
- ¼ cup (50g) granulated sugar for topping
- 1 tablespoon ground cinnamon for topping
- 2 tablespoons unsalted butter, melted for brushing
Instructions:
- Preheat the oven to 350°F (175°C) and grease the muffin tin or line with muffin liners.
- In a large bowl, whisk together the flour, baking powder, ground cinnamon, salt, and sugar until well-mixed.
- In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Mix until combined.
- Pour the wet mixture into the dry ingredients. Gently stir with a spatula until just combined—don’t overmix!
- Divide the batter evenly among the muffin cups, filling them about ¾ full.
- Bake in the preheated oven for about 15-20 minutes or until golden brown and a toothpick inserted into the centre comes out clean.
- While muffins are baking, mix granulated sugar and cinnamon in a small bowl.
- Once out of the oven, brush the tops of muffins with melted butter, then sprinkle with cinnamon sugar mix while still warm.
- Allow muffins to cool in the tin for 5 minutes before transferring them to a cooling rack.
