Ingredients:

  • 4 large, ripe tomatoes (about 800g / 1.75 lbs), sliced 1/4-inch thick
  • 8 ounces (225g) fresh mozzarella cheese, sliced 1/4-inch thick
  • 1/2 cup (loosely packed) fresh basil leaves (about 30g)
  • 1/4 cup (60ml) extra virgin olive oil
  • Balsamic glaze (optional)
  • Sea salt flakes, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Wash and dry tomatoes. Slice them into even 1/4-inch thick rounds.
  2. Drain the mozzarella from its liquid. Slice the mozzarella into even 1/4-inch thick rounds.
  3. Arrange tomato and mozzarella slices alternately on a serving platter or individual plates, overlapping slightly.
  4. Tuck fresh basil leaves between the tomato and mozzarella slices.
  5. Drizzle generously with extra virgin olive oil.
  6. Season with sea salt flakes and freshly ground black pepper to taste.
  7. Drizzle with balsamic glaze, if desired. Serve immediately.
