Ingredients:
- 4 large, ripe tomatoes (about 800g / 1.75 lbs), sliced 1/4-inch thick
- 8 ounces (225g) fresh mozzarella cheese, sliced 1/4-inch thick
- 1/2 cup (loosely packed) fresh basil leaves (about 30g)
- 1/4 cup (60ml) extra virgin olive oil
- Balsamic glaze (optional)
- Sea salt flakes, to taste
- Freshly ground black pepper, to taste
Instructions:
- Wash and dry tomatoes. Slice them into even 1/4-inch thick rounds.
- Drain the mozzarella from its liquid. Slice the mozzarella into even 1/4-inch thick rounds.
- Arrange tomato and mozzarella slices alternately on a serving platter or individual plates, overlapping slightly.
- Tuck fresh basil leaves between the tomato and mozzarella slices.
- Drizzle generously with extra virgin olive oil.
- Season with sea salt flakes and freshly ground black pepper to taste.
- Drizzle with balsamic glaze, if desired. Serve immediately.
