Ingredients:

  • 2 oz London Dry Gin
  • 0.75 oz Freshly squeezed lemon juice
  • 0.5 oz Raspberry syrup
  • 1 Fresh egg white
  • 3 Fresh raspberries
  • 1 Fresh mint leaf

Instructions:

  1. Chill your Coupé or Nick & Nora glass in the freezer or with ice water.
  2. Add gin, lemon juice, raspberry syrup, and egg white to a cocktail shaker without ice.
  3. Perform a 'Dry Shake' by shaking vigorously for 15 seconds to emulsify the egg white proteins.
  4. Fill the shaker with ice and perform a 'Wet Shake' for 10–12 seconds until the shaker is frost-cold.
  5. Double-strain the mixture through a Hawthorne strainer and a fine-mesh strainer into the chilled glass.
  6. Garnish with three fresh raspberries on a cocktail pick.
