Ingredients:
- 2 oz London Dry Gin
- 0.75 oz Freshly squeezed lemon juice
- 0.5 oz Raspberry syrup
- 1 Fresh egg white
- 3 Fresh raspberries
- 1 Fresh mint leaf
Instructions:
- Chill your Coupé or Nick & Nora glass in the freezer or with ice water.
- Add gin, lemon juice, raspberry syrup, and egg white to a cocktail shaker without ice.
- Perform a 'Dry Shake' by shaking vigorously for 15 seconds to emulsify the egg white proteins.
- Fill the shaker with ice and perform a 'Wet Shake' for 10–12 seconds until the shaker is frost-cold.
- Double-strain the mixture through a Hawthorne strainer and a fine-mesh strainer into the chilled glass.
- Garnish with three fresh raspberries on a cocktail pick.
