Ingredients:

  • 1 lb (450 g) ground beef (80% lean)
  • 1 cup (100 g) fresh bread crumbs (or 3 slices of bread, crusts removed)
  • 1 large egg
  • 1/2 cup (75 g) onion, finely chopped
  • 1/2 cup (75 g) bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) milk
  • 1 tsp (5 g) Worcestershire sauce
  • 1 tsp (5 g) salt
  • 1/2 tsp (2 g) black pepper
  • 1/2 tsp (2 g) dried thyme (optional)
  • 1/3 cup (80 ml) ketchup
  • 2 tbsp (30 g) brown sugar
  • 1 tbsp (15 ml) apple cider vinegar

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. If using slices, tear them into small pieces to create crumbs.
  3. In a skillet, lightly sauté the onion, bell pepper, and garlic until softened; set aside to cool.
  4. In a large mixing bowl, combine ground beef, bread crumbs, cooled sautéed vegetables, egg, milk, Worcestershire sauce, salt, pepper, and thyme (if using).
  5. Using your hands, mix the ingredients until just combined (avoid overmixing).
  6. Transfer the mixture to a loaf pan and shape it evenly.
  7. In a small bowl, combine ketchup, brown sugar, and apple cider vinegar.
  8. Spread a layer of glaze over the top of the meatloaf.
  9. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
  10. Let the meatloaf rest for 10 minutes before slicing and serving.
