Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 large eggs
  • 1 1/4 cups (300ml) milk
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 tablespoon (15g) granulated sugar
  • Pinch of salt
  • 1/4 cup (60ml) fresh orange juice
  • Zest of 1 orange
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (60ml) Grand Marnier or orange liqueur
  • 2 tablespoons (30g) unsalted butter

Instructions:

  1. In a bowl, whisk flour, sugar, and salt. Create a well in the center and add eggs; whisk until smooth. Gradually whisk in milk and melted butter until combined. Chill the batter for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour in a small amount of batter, tilting the pan to coat evenly. Cook for 1-2 minutes until edges are golden; flip and cook for another minute. Repeat with remaining batter.
  3. In a skillet, combine orange juice, zest, and sugar over medium heat until the sugar dissolves. Add butter and stir until melted and smooth.
  4. Fold each crepe into quarters and add to the sauce in batches, allowing them to soak briefly.
  5. Carefully add Grand Marnier, then ignite with a long match or lighter. Allow to flambé until the flames subside.
  6. Plate the crepes, drizzle with sauce, and garnish as desired.
