Ingredients:
- 1 cup (125g) all-purpose flour
- 2 large eggs
- 1 1/4 cups (300ml) milk
- 2 tablespoons (30g) unsalted butter, melted
- 1 tablespoon (15g) granulated sugar
- Pinch of salt
- 1/4 cup (60ml) fresh orange juice
- Zest of 1 orange
- 1/4 cup (50g) granulated sugar
- 1/4 cup (60ml) Grand Marnier or orange liqueur
- 2 tablespoons (30g) unsalted butter
Instructions:
- In a bowl, whisk flour, sugar, and salt. Create a well in the center and add eggs; whisk until smooth. Gradually whisk in milk and melted butter until combined. Chill the batter for 30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it. Pour in a small amount of batter, tilting the pan to coat evenly. Cook for 1-2 minutes until edges are golden; flip and cook for another minute. Repeat with remaining batter.
- In a skillet, combine orange juice, zest, and sugar over medium heat until the sugar dissolves. Add butter and stir until melted and smooth.
- Fold each crepe into quarters and add to the sauce in batches, allowing them to soak briefly.
- Carefully add Grand Marnier, then ignite with a long match or lighter. Allow to flambé until the flames subside.
- Plate the crepes, drizzle with sauce, and garnish as desired.
