Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 carrot, finely chopped
- 1 stalk celery, finely chopped
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and freshly ground black pepper, to taste
- 1 teaspoon red pepper flakes (optional)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced onion, carrot, and celery; sauté until softened (~5-7 minutes).
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in crushed tomatoes and tomato paste.
- Season with oregano, basil, salt, pepper, and red pepper flakes (if using).
- Bring the mixture to a simmer; reduce heat to low.
- Cover pot and let it simmer for 2 hours, stirring occasionally.
- Taste and adjust seasoning as necessary before serving.
