Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrot, and celery; sauté until softened (~5-7 minutes).
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in crushed tomatoes and tomato paste.
  5. Season with oregano, basil, salt, pepper, and red pepper flakes (if using).
  6. Bring the mixture to a simmer; reduce heat to low.
  7. Cover pot and let it simmer for 2 hours, stirring occasionally.
  8. Taste and adjust seasoning as necessary before serving.
