Ingredients:

  • 1 lb fresh broccoli florets, cut into bite-sized pieces
  • 1/2 cup red onion, finely diced
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup sharp cheddar cheese, cubed small
  • 1/2 cup sliced almonds or sunflower seeds
  • 6 oz thick-cut bacon, cooked until crispy and crumbled
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Wash the broccoli thoroughly and pat dry. Chop the florets into very small, uniform pieces.
  2. In a large mixing bowl, combine the chopped broccoli, diced red onion, dried cranberries, and cubed cheddar.
  3. In a smaller bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until the sugar has dissolved and the mixture is smooth and glossy.
  4. Pour the dressing over the broccoli mixture and fold the ingredients together until every floret is evenly coated.
  5. Gently fold in the crumbled bacon and sliced almonds.
  6. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the broccoli to soften slightly.
