Ingredients:
- 1 lb fresh broccoli florets, cut into bite-sized pieces
- 1/2 cup red onion, finely diced
- 1/2 cup dried cranberries or raisins
- 1/2 cup sharp cheddar cheese, cubed small
- 1/2 cup sliced almonds or sunflower seeds
- 6 oz thick-cut bacon, cooked until crispy and crumbled
- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Wash the broccoli thoroughly and pat dry. Chop the florets into very small, uniform pieces.
- In a large mixing bowl, combine the chopped broccoli, diced red onion, dried cranberries, and cubed cheddar.
- In a smaller bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until the sugar has dissolved and the mixture is smooth and glossy.
- Pour the dressing over the broccoli mixture and fold the ingredients together until every floret is evenly coated.
- Gently fold in the crumbled bacon and sliced almonds.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the broccoli to soften slightly.
