Ingredients:
- 2 tablespoons vegetable oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 medium zucchini, sliced
- 1 cup broccoli florets
- 1 cup sugar snap peas
- 1 cup sliced mushrooms
- 1 tablespoon soy sauce
- 1 teaspoon fresh ginger, grated
- Salt and pepper to taste
- 2 green onions, chopped
- Sesame seeds, optional
Instructions:
- Wash and chop all vegetables into bite-sized pieces.
- Place the stir fry pan over medium-high heat and add vegetable oil.
- Add sliced onion and garlic; sauté for 1-2 minutes until fragrant.
- Add bell pepper, zucchini, broccoli, sugar snap peas, and mushrooms. Stir-fry for about 5-6 minutes until crisp-tender.
- Mix in soy sauce and ginger. Stir until all vegetables are evenly coated and heated through (1-2 minutes). Add salt and pepper to taste.
- Remove from heat, garnish with green onions and sesame seeds. Serve immediately.
