Ingredients:

  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup sugar snap peas
  • 1 cup sliced mushrooms
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste
  • 2 green onions, chopped
  • Sesame seeds, optional

Instructions:

  1. Wash and chop all vegetables into bite-sized pieces.
  2. Place the stir fry pan over medium-high heat and add vegetable oil.
  3. Add sliced onion and garlic; sauté for 1-2 minutes until fragrant.
  4. Add bell pepper, zucchini, broccoli, sugar snap peas, and mushrooms. Stir-fry for about 5-6 minutes until crisp-tender.
  5. Mix in soy sauce and ginger. Stir until all vegetables are evenly coated and heated through (1-2 minutes). Add salt and pepper to taste.
  6. Remove from heat, garnish with green onions and sesame seeds. Serve immediately.
