Ingredients:

  • 8 oz dried rice noodles
  • 2 quarts water
  • 1 tsp sea salt
  • 1 tsp neutral oil
  • 1 tsp rice vinegar

Instructions:

  1. Bring 2 quarts of water to a rolling boil. Once boiling, remove from the heat source and let the water rest for 60 seconds to reach approximately 195°F (90°C).
  2. Place the dried rice noodles in a large heatproof glass or stainless steel bowl. Pour the off-boil water over the noodles until they are completely submerged.
  3. Add the sea salt, neutral oil, and rice vinegar to the soaking water. Use tongs to gently wiggle and separate the strands to ensure even hydration and prevent tangling.
