- 2 cups (480 ml) water
- 1/4 cup (50 g) sugar (or maple syrup as a substitute)
- 1/4 cup (30 g) cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Shaved dark chocolate or almond slices (for garnish)
- Fresh berries (e.g., strawberries, blueberries)
Instructions:
- In a medium saucepan, whisk together the almond milk powder, sugar, cornstarch, and salt.
- Slowly pour in the water while whisking to avoid lumps.
- Place the saucepan over medium heat and continuously whisk until the mixture thickens and reaches a pudding-like consistency, about 5 minutes.
- Remove from heat, stir in the vanilla extract, and pour into serving containers. Allow to cool at room temperature, then refrigerate until set (about 1-2 hours).
- Once chilled, serve topped with shaved chocolate or fresh berries.
