Ingredients:

  • 1/2 cup (50 g) almond milk powder
  • 2 cups (480 ml) water
  • 1/4 cup (50 g) sugar (or maple syrup as a substitute)
  • 1/4 cup (30 g) cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Shaved dark chocolate or almond slices (for garnish)
  • Fresh berries (e.g., strawberries, blueberries)

Instructions:

  1. In a medium saucepan, whisk together the almond milk powder, sugar, cornstarch, and salt.
  2. Slowly pour in the water while whisking to avoid lumps.
  3. Place the saucepan over medium heat and continuously whisk until the mixture thickens and reaches a pudding-like consistency, about 5 minutes.
  4. Remove from heat, stir in the vanilla extract, and pour into serving containers. Allow to cool at room temperature, then refrigerate until set (about 1-2 hours).
  5. Once chilled, serve topped with shaved chocolate or fresh berries.
