Ingredients:

  • 2 cups (480 ml) Silk Almond Milk (unsweetened)
  • 1/4 cup (50 g) granulated sugar or sweetener of choice
  • 1/4 cup (30 g) cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt
  • Fresh berries (strawberries, blueberries, etc.)
  • Chopped nuts (almonds or walnuts)
  • Whipped coconut cream

Instructions:

  1. In a medium saucepan, combine cornstarch, sugar, and salt. Slowly add Silk Almond Milk while whisking to avoid lumps.
  2. Place the saucepan over medium heat. Continuously whisk the mixture until it begins to thicken (about 5 minutes).
  3. Once thickened, remove from heat and stir in vanilla extract.
  4. Pour the mixture into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours until set.
  5. Once chilled, serve the pudding with optional garnishes like berries, nuts, or whipped coconut cream.
