Ingredients:
- 2 cups (480 ml) Silk Almond Milk (unsweetened)
- 1/4 cup (50 g) granulated sugar or sweetener of choice
- 1/4 cup (30 g) cornstarch
- 1 tsp vanilla extract
- Pinch of salt
- Fresh berries (strawberries, blueberries, etc.)
- Chopped nuts (almonds or walnuts)
- Whipped coconut cream
Instructions:
- In a medium saucepan, combine cornstarch, sugar, and salt. Slowly add Silk Almond Milk while whisking to avoid lumps.
- Place the saucepan over medium heat. Continuously whisk the mixture until it begins to thicken (about 5 minutes).
- Once thickened, remove from heat and stir in vanilla extract.
- Pour the mixture into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours until set.
- Once chilled, serve the pudding with optional garnishes like berries, nuts, or whipped coconut cream.
