Ingredients:
- 1 cup mashed potatoes (about 2 medium potatoes, peeled and boiled) (240g)
- 3 cups powdered sugar (360g)
- 1/4 cup unsweetened cocoa powder (30g)
- 1/2 cup unsalted butter, softened (115g)
- 1 tsp vanilla extract (5mL)
- 1 1/2 cups semisweet chocolate chips (255g)
- 2 tbsp vegetable oil (30mL)
Instructions:
- Line the baking pan with parchment paper, allowing some overhang for easy removal.
- In a mixing bowl, combine the mashed potatoes and softened butter. Mix until smooth using an electric mixer.
- In a separate bowl, whisk together powdered sugar and cocoa powder.
- Gradually add the dry ingredients to the potato mixture, mixing at low speed. Stir in the vanilla extract until fully incorporated.
- Spread the fudge mixture evenly into the prepared baking pan. Smooth the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 30 minutes until firm.
- In a double boiler or microwave, melt chocolate chips with vegetable oil until smooth.
- Cut the chilled fudge into squares. Dip each square into the melted chocolate, allowing excess to drip off.
- Place coated squares back on parchment paper to set. Refrigerate if necessary to firm up the chocolate.
