Ingredients:

  • 1 cup mashed potatoes (about 2 medium potatoes, peeled and boiled) (240g)
  • 3 cups powdered sugar (360g)
  • 1/4 cup unsweetened cocoa powder (30g)
  • 1/2 cup unsalted butter, softened (115g)
  • 1 tsp vanilla extract (5mL)
  • 1 1/2 cups semisweet chocolate chips (255g)
  • 2 tbsp vegetable oil (30mL)

Instructions:

  1. Line the baking pan with parchment paper, allowing some overhang for easy removal.
  2. In a mixing bowl, combine the mashed potatoes and softened butter. Mix until smooth using an electric mixer.
  3. In a separate bowl, whisk together powdered sugar and cocoa powder.
  4. Gradually add the dry ingredients to the potato mixture, mixing at low speed. Stir in the vanilla extract until fully incorporated.
  5. Spread the fudge mixture evenly into the prepared baking pan. Smooth the top with a spatula.
  6. Cover with plastic wrap and refrigerate for at least 30 minutes until firm.
  7. In a double boiler or microwave, melt chocolate chips with vegetable oil until smooth.
  8. Cut the chilled fudge into squares. Dip each square into the melted chocolate, allowing excess to drip off.
  9. Place coated squares back on parchment paper to set. Refrigerate if necessary to firm up the chocolate.
