Ingredients:
- 2 cups all-purpose flour (250g)
- 3/4 cup boiling water (180ml)
- 1/2 teaspoon salt (3g)
- 4-5 scallions, finely chopped (about 50g)
- 2 tablespoons sesame oil (30ml)
- Additional salt to taste
- Vegetable oil for frying (amount as needed)
Instructions:
- Combine flour and salt in a bowl.
- Gradually pour in boiling water, stirring until a shaggy dough forms.
- Knead the dough on a floured surface until smooth, about 5 minutes.
- Cover with plastic wrap and let it rest for 30 minutes.
- In a bowl, mix chopped scallions with sesame oil and a pinch of salt.
- Divide rested dough into 4 equal pieces.
- Roll each piece into a thin circle on a lightly floured surface.
- Spread a thin layer of scallion filling over each dough circle.
- Roll the dough into a log and then coil it into a spiral.
- Flatten gently with your palm, then roll out into a pancake shape again.
- Heat oil in a skillet over medium heat.
- Cook each pancake 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels before serving.
