Ingredients:

  • 2 cups raw, shelled peanuts
  • 1/4 cup honey
  • 1 large egg white
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 300°F (150°C). Line a large, rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk the 1 large egg white lightly until it becomes slightly foamy. Whisk in the 1/4 cup honey, 2 tablespoons granulated sugar, 1 teaspoon salt, and 1 teaspoon vanilla extract until the mixture is just combined.
  3. Add the 2 cups of raw peanuts to the binding mixture and stir thoroughly, ensuring every peanut is completely coated in the honey-egg white layer.
  4. Spread the coated peanuts in a single layer on the prepared baking sheet. Bake for 30 minutes, stirring gently every 10 minutes to ensure even browning and prevent sticking.
  5. Remove the peanuts from the oven. The coating will appear soft and slightly sticky. Allow the peanuts to cool completely on the baking sheet for 20–25 minutes until the coating dries and hardens into a crisp, shatter-resistant shell. Serve or store in an airtight container.
