Ingredients:
- 4 slices of thick-cut bread (such as brioche or challah) (240g)
- 4 slices of deli ham (120g)
- 4 slices of turkey breast (120g)
- 4 slices of Swiss cheese (120g)
- 2 large eggs (100g)
- ½ cup whole milk (120ml)
- 1 tsp vanilla extract (5ml)
- Pinch of salt and pepper
- 2 tbsp unsalted butter (30g) for frying
- 1 cup mixed berries (fresh or frozen) (150g)
- 2 tbsp granulated sugar (25g)
- 1 tbsp lemon juice (15ml)
Instructions:
- In a saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat until berries break down and mixture thickens, about 5-7 minutes. Set aside to cool.
- Layer ham, turkey, and Swiss cheese on two slices of bread. Top with remaining bread slices to form two sandwiches.
- In a mixing bowl, whisk together eggs, milk, vanilla extract, salt, and pepper.
- Heat butter in a heated frying pan over medium heat. Dip each sandwich in the egg mixture, coating well. Fry each sandwich in the pan until golden brown, about 3-4 minutes per side.
- Cut the sandwiches in half, serve warm with the berry compote drizzled over the top.
