Ingredients:

  • 2 cups cooked, shredded chicken breast
  • 1 cup diced celery
  • 1/2 cup diced red onion
  • 1 cup seedless grapes, halved
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • For Sandwiches: 8 slices of whole-grain bread
  • For Salads: 4 cups mixed greens
  • For Dips: 1 cup whole-grain crackers

Instructions:

  1. Place chicken breasts in a medium pot with enough water to cover. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cooked through. Remove chicken, let cool, and shred.
  2. In a large mixing bowl, combine shredded chicken, diced celery, diced red onion, and halved grapes.
  3. In a separate bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and salt and pepper.
  4. Pour the dressing mixture over the chicken and vegetable mixture. Stir until well combined.
  5. Choose your preferred way to enjoy: as a sandwich, on a bed of mixed greens, or as a dip with crackers.
