Ingredients:
- 2 cups cooked, shredded chicken breast
- 1 cup diced celery
- 1/2 cup diced red onion
- 1 cup seedless grapes, halved
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- For Sandwiches: 8 slices of whole-grain bread
- For Salads: 4 cups mixed greens
- For Dips: 1 cup whole-grain crackers
Instructions:
- Place chicken breasts in a medium pot with enough water to cover. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cooked through. Remove chicken, let cool, and shred.
- In a large mixing bowl, combine shredded chicken, diced celery, diced red onion, and halved grapes.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and salt and pepper.
- Pour the dressing mixture over the chicken and vegetable mixture. Stir until well combined.
- Choose your preferred way to enjoy: as a sandwich, on a bed of mixed greens, or as a dip with crackers.
