Ingredients:

  • 1 cup (150g) cornmeal
  • 1 cup (120g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 ½ tablespoons sugar (optional, for sweetness)
  • 1 cup (240ml) unsweetened almond milk (or regular milk)
  • 2 large eggs
  • ¼ cup (60ml) unsalted butter, melted
  • 1 tablespoon honey (optional, for sweetness)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine cornmeal, flour, baking powder, and sugar (if using).
  3. In another bowl, whisk together almond milk, eggs, melted butter, and honey (if using).
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Transfer the batter to a greased baking dish or skillet.
  6. Bake in the preheated oven for 20-25 minutes, until golden brown and a toothpick inserted into the centre comes out clean.
  7. Allow to cool for a few minutes before slicing and serving.
