Ingredients:
- 1 cup (150g) cornmeal
- 1 cup (120g) all-purpose flour
- 1 tablespoon baking powder
- 1 ½ tablespoons sugar (optional, for sweetness)
- 1 cup (240ml) unsweetened almond milk (or regular milk)
- 2 large eggs
- ¼ cup (60ml) unsalted butter, melted
- 1 tablespoon honey (optional, for sweetness)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine cornmeal, flour, baking powder, and sugar (if using).
- In another bowl, whisk together almond milk, eggs, melted butter, and honey (if using).
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Transfer the batter to a greased baking dish or skillet.
- Bake in the preheated oven for 20-25 minutes, until golden brown and a toothpick inserted into the centre comes out clean.
- Allow to cool for a few minutes before slicing and serving.
