Ingredients:

  • 4 crusty rolls or baguettes (e.g., pretzel rolls, German bread rolls)
  • 250g (about 9 oz) matjes herring fillets
  • 1 small red onion, thinly sliced
  • 1 small apple (e.g., Granny Smith), cored and diced
  • 100g (about 3.5 oz) crème fraîche or sour cream
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill sprigs for garnish
  • Sliced radishes for garnish

Instructions:

  1. Prepare the onion and apple mixture by peeling and thinly slicing the red onion and dicing the apple into small pieces.
  2. In a mixing bowl, combine crème fraîche, lemon juice, chopped dill, salt, and pepper. Stir until well mixed.
  3. Add the sliced onions and diced apple to the dressing and gently fold in. Chill in the fridge for 30 minutes.
  4. Cut the rolls in half and place a herring fillet on each half. Spoon the onion and apple mixture over the herring.
  5. Garnish with fresh dill sprigs and sliced radishes. Serve immediately or chill briefly before serving.
