Ingredients:
- 4 crusty rolls or baguettes (e.g., pretzel rolls, German bread rolls)
- 250g (about 9 oz) matjes herring fillets
- 1 small red onion, thinly sliced
- 1 small apple (e.g., Granny Smith), cored and diced
- 100g (about 3.5 oz) crème fraîche or sour cream
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh dill sprigs for garnish
- Sliced radishes for garnish
Instructions:
- Prepare the onion and apple mixture by peeling and thinly slicing the red onion and dicing the apple into small pieces.
- In a mixing bowl, combine crème fraîche, lemon juice, chopped dill, salt, and pepper. Stir until well mixed.
- Add the sliced onions and diced apple to the dressing and gently fold in. Chill in the fridge for 30 minutes.
- Cut the rolls in half and place a herring fillet on each half. Spoon the onion and apple mixture over the herring.
- Garnish with fresh dill sprigs and sliced radishes. Serve immediately or chill briefly before serving.
