Ingredients:
- 1 cup (200 g) raw cashews, soaked for 4 hours
- 1/4 cup (60 ml) water (for blending)
- 2 tablespoons (30 ml) lemon juice (freshly squeezed)
- 2 tablespoons (30 ml) nutritional yeast
- 1 clove garlic (minced)
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 tablespoon (15 g) chopped fresh herbs (such as chives or dill) for garnish
Instructions:
- Drain and rinse soaked cashews.
- In a blender, combine cashews, water, lemon juice, nutritional yeast, garlic, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
- Taste the mix and adjust seasoning (more salt or lemon, if desired).
- Transfer to a mixing bowl, cover, and refrigerate for at least 30 minutes.
- Top with chopped herbs just before serving. Enjoy with crackers or vegetables.
