Ingredients:

  • 1 cup (200 g) raw cashews, soaked for 4 hours
  • 1/4 cup (60 ml) water (for blending)
  • 2 tablespoons (30 ml) lemon juice (freshly squeezed)
  • 2 tablespoons (30 ml) nutritional yeast
  • 1 clove garlic (minced)
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon (15 g) chopped fresh herbs (such as chives or dill) for garnish

Instructions:

  1. Drain and rinse soaked cashews.
  2. In a blender, combine cashews, water, lemon juice, nutritional yeast, garlic, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
  3. Taste the mix and adjust seasoning (more salt or lemon, if desired).
  4. Transfer to a mixing bowl, cover, and refrigerate for at least 30 minutes.
  5. Top with chopped herbs just before serving. Enjoy with crackers or vegetables.
