Ingredients:
- 1 cup raw cashews, soaked in water for at least 2 hours
- 1/4 cup nutritional yeast
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill, chopped (optional)
- 1/2 tablespoon capers, drained and chopped (optional)
Instructions:
- Drain and rinse soaked cashews.
- In a high-speed blender, combine cashews, nutritional yeast, lemon juice, apple cider vinegar, garlic powder, onion powder, sea salt, and black pepper.
- Blend on high speed until creamy and smooth. Scrape down the sides as needed.
- Taste and adjust seasoning if desired; add chopped dill and capers if using.
- Transfer the dip into a mixing bowl, cover, and refrigerate for at least 30 minutes to enhance flavors.
- Before serving, give a good stir and adjust consistency if necessary with a splash of water.
