Ingredients:

  • 3 large egg yolks
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 1/2 sticks dairy free butter
  • Salt and black pepper (to taste)

Instructions:

  1. Melt the butter. Place the butter in a microwave-safe bowl and cover the bowl to prevent splatters. Heat for 15-second intervals until butter is almost melted. Remove from the microwave and stir until melted. Set aside.
  2. Temper the egg yolks. In a double broiler or heat-proof glass bowl, whisk the egg yolks, lemon juice, and Dijon mustard until smooth. Place on top of a saucepan with about 1-inch of water and bring the water to a boil over medium heat.
  3. Add the butter. As the mixture heats, slowly whisk in the melted butter until incorporated. Continue to temper until the sauce thickens and coats the back of a spoon.
  4. Cool and serve. Remove from heat and adjust seasoning with salt and pepper to taste. Transfer to a serving dish and serve warm.
