Ingredients:
- 4 ears frozen corn on the cob
- 1/4 cup olive oil
- 1/4 cup lime juice, freshly squeezed
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
Instructions:
- In a large bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, cayenne pepper (if using), salt, and black pepper.
- Place the frozen corn on the cob in the bowl with the marinade. Ensure the corn is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat your grill to medium heat (around 350-400°F or 175-200°C). Clean and lightly oil the grill grates.
- Remove the corn from the marinade, letting any excess drip off. Place the corn directly on the preheated grill.
- Grill for 10-12 minutes, turning the corn every 2-3 minutes, until it's heated through and has grill marks on all sides. If the marinade starts to burn excessively, move the corn to a cooler part of the grill.
- Remove the corn from the grill. Garnish with chopped cilantro and serve with lime wedges.
