Ingredients:

  • 4 ears frozen corn on the cob
  • 1/4 cup olive oil
  • 1/4 cup lime juice, freshly squeezed
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions:

  1. In a large bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, cayenne pepper (if using), salt, and black pepper.
  2. Place the frozen corn on the cob in the bowl with the marinade. Ensure the corn is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your grill to medium heat (around 350-400°F or 175-200°C). Clean and lightly oil the grill grates.
  4. Remove the corn from the marinade, letting any excess drip off. Place the corn directly on the preheated grill.
  5. Grill for 10-12 minutes, turning the corn every 2-3 minutes, until it's heated through and has grill marks on all sides. If the marinade starts to burn excessively, move the corn to a cooler part of the grill.
  6. Remove the corn from the grill. Garnish with chopped cilantro and serve with lime wedges.
